Cinnamon Rolls for Christmas Morning!

What better way to start off Christmas with an easy and YUMMY cinnamon roll recipe!
Every Christmas morning my dad wakes up super early to make my family cinnamon rolls. It was always so exciting to wakeup to the sweet delicious smell of them baking in the oven...until I became gluten-free- Then it became stupid.

So for the past 4 years being GF, I've had to suffer and watch my family eat two pans of fluffy, doughy, mouth watering cinnamon rolls and listen to their sympathy LIES saying  "ew this tastes terrible, you're not missing out". I don't know about you but that is definitely not how I want to spend every Christmas morning... and thankfully now I don't now because I finally found a recipe that tastes almost {and I mean, almost} as good as my dad's recipe! Hip-hip hooray! Andit's super easy and it's quick to!

Quick and Easy Cinnamon Rolls! (GF & DF)
Heat oven to 425 degrees.

Makes two large rolls or 10 mini rolls.


Dough:

1 1/3 cup flour or gluten-free all-purpose flour (I use Tom Saywer)
1 tbsp evaporated cane juice (very fine cane sugar)
3/4 tsp baking powder
1/4 tsp baking soda
2/3 cup buttermilk ( I used the cream of tarter and dairy-free milk substitution)
3 tbsp butter, melted (I used Natural Balance vegan butter for my DF version)

Filling:
1 tbsp butter (or vegan butter), melted
1 tbsp sugar
1 tsp cinnamon

Glaze:
1 tbsp water/milk (I used DF hemp milk)
1/4-1/2 cup powdered sugar

 

1. In a large bowl, combine all the dry ingredients then stir in the melted butter and the buttermilk. Use your hands to roll the dough into a ball. *The dough will be crumbly and sticky, so do your best to make sure you get all the flour in the bowl.

2. Knead the dough on a floured surface until the dough comes together, adding more flour if necessary. You want the dough to be manageable and not too sticky but try not to overwork it.

3. With a floured rolling pin, roll the dough out into a rectangle about one cm or half an inch thick. Spread the surface of the dough with the melted butter and then sprinkle on the sugar and cinnamon.

4. Roll the dough from the long side, like a jelly-roll. Cut the dough to make two large rolls or eight mini rolls.

5. Place the rolls in a lightly greased pan and place in the oven for about 15-20 minutes or until the edges begin to golden.

6. For the glaze, mix the water or milk with the powdered sugar and pour onto the rolls while they are still hot.
