When I lived near the beach in San Diego, there was a smoothie place I would go to almost every other day just to get an acai bowl.
What is an acai [ah-sigh-ee] bowl? It's a bowl of pure goodness, that's what it is.
Hah, no I'll tell you. But first you need to know what an acai berry is...
Acai (also known as the palm berry) is a fruit grown on palm trees in Brazilian rainforests and it is loaded with nutrients, making it part of the "superfood" family. Some studies have even shown that the acai berry has more antioxidants than cranberries, raspberries, blackberries, strawberries, and blueberries. (antioxidants help reduce the risk of diseases, such as heart disease and cancer) Pretty darn cool, huh?
So an acai bowl is basically pureed frozen acai with additional ingredients for toppings such as bananas, blueberries, coconut shavings, etc. The list goes on! THEY'RE JUST SO GOOD.
Acai bowls are becoming more popular (especially at any smoothie or health food joint) but they can be a little on the pricey side due to their amazing health benefits. But that's okay, because Sambazon sells frozen acai packets so we can make them ourselves!
Here is my version of the perfect acai bowl:
Acai Bowl (GF, DF)
Place the following ingredients into your vitamix, or high-powered blender:
~ 2 packets of Sambazon *unsweetened* acai packets
~ 1 banana
~ 1 cup frozen blueberries
~ 4 oz *unsweetened* apple juice, or unsweetened almond milk
~ 2 tsp organic honey
Blend until well combined. It should be pretty thick, so try not to add more apple juice!
Once it's at the right consistency, pour (or scoop) into a bowl and add the following toppings:
~ sliced kiwi
~ sliced banana
~ hemp seeds
~ drizzled honey
Other topping options:
~ trail mix
~ cacao nibs
~ coconut shavings
~ almond butter/peanut butter
~ goji berries
~ chia seeds
~ sliced almonds
Now tell me this isn't a bowl of pure goodness?
